The Lentil dish is actually a meal in itself. Hanif's Beef Curry Recipe In saucepan: 3 Tbs. vegetable oil 1 med. onion (chopped) 2 garlic cloves While frying above, measure spices: 1/4 tsp. tumeric 1/4 tsp. red papper 1 tsp. ginger 1-1/2 tsp. coriander 1 tsp cumin Make sure that the onions don't burn; when slightly brown add spices and 1/2 cup of water; stir until throughly mixed. Add 1 pound of stewing beef (trimmed of excess fat), and stir until the spices tend to stick to the bottom of the pan. With hot water ready, add 2 cups to beef. Medium Heat. Cover Pan. When beef is almost tender (this will take about and hour, check water level if almost dry add 1/2 cup water) add: 1 large potato 1/2 tsp. salt 2 cardamon seeds 5 black peppercorns 1/2 cinnamon stick 1 large (or 2 small) bay leaves 2 whole cloves. Cook until beef and potatoes are done. Eat with rice or Syrian bread. ----------- Hanif's Lentils Recipe 3/4 c. lentils 6 c. hot water 1/2 med. chopped onion 1 tbs. vegetable oil 1/8 tsp tumeric. Boil above for 30 min. over high heat. Beat with an egg beater, if the lentils are still too hard cook for another 15 min. Next and 1 large tomato and 1 tsp. of salt. In frying pan: 2 tbsp. oil, butter, or margarine other 1/2 of med onion (chopped) mushrooms (optional) 2 cloves of garlic 2 unbroken hot peppers When onions are brown add 1/2 tsp of whole cumin. Pour lentils into a frying pan and then replace into original pan. Cook for 5 min.
