I should add a caveat: my attempt at making it failed miserably, for reasons that remain obscure. Her version is delicious, though. 1 lb raw carrots (~ 7 medium) 1/4 c margarine, melted 1/2 c matzoh meal (bread crumbs will probably work as well) 3 Tbsp potato starch 1/2 c white wine (sweet) 1/4 c raisins 1 tsp cinnamon 1 tsp powdered ginger 1 egg 1/2 tsp salt juice and grated rind of 1 lemon Preheat the oven to 350 degrees. Grease ring mold with margarine. Scrape, wash, and grate carrots. Cream margarine and matzoh meal together. Dissolve potato starch in wine and add to marg. mixture. Add remaining ingredients. Turn into mold (ugh!) and bake 1 hour.
