Beat well. Fold in rice, lemon juice, vanilla, melted butter, nutmeg, cinnamon, & raisins. Pour the mixture into a greased, two-quart casserole, and put the casserole in a pan of boiling water in an oven preheated to 350 degrees Fahrenheit. Bake for 60 minutes, or until custard is set (jiggle the casserole -- if it acts like jello, it's set).
