Aeagle.226 net.cooks utcsrgv!utzoo!decvax!ucbvax!ihnss!eagle!cw Thu Feb 18 19:54:34 1982 Chinese Broiled Chicken Chinese Broiled Chicken Ingredients 1/2 cup soy sauce 1/2 cup water 1 Tbl cooking oil 1 tsp sugar 1 Tbl sherry or sake (optional) 1 Tbl chopped fresh ginger 2-3 cloves chopped garlic 1/2 tsp coarse ground black pepper 1/2 tsp dry mustard 1 frying chicken cut up Method Combine all the ingredients except the chicken to form a marinade. Marinate the chicken for at least 4 hours. Broil chicken using the marinade for basting. Notes The marinade can also be used for a roasting chicken. Put the chicken and the marinade in a plastic bag (leakproof) and let sit for at least 4 hours. Make sure the entire chicken is wetted thoroughly. Bake chicken for 40-60 minutes (until done) at 325 degrees. Baste chicken while baking with marinade. This marinade also works for pork chops or boned pork tenderloin. Grill or broil the pork. Obviously, variations in the marinade are encouraged and the amounts can be modified as necessary or desirable.
