It makes an excellent breakfast bread. Printed first in the "FooDay" supplement to the Oregonian and Oregon Journal around last Thanksgiving, and no author is claimed. The Butter Sauce is extremely sweet and makes the bread rather cakelike, so we usually omit it. The bread is better without it. Quick Cranberry Bread 2 cups flour 1 cup sugar 2 tsp baking powder 1/2 tsp salt 2/3 cup undiluted evap milk (*NOT* sweetened condensed) 1/3 cup water 1 tbsp melted butter (or salad oil) 2 cups whole fresh cranberries ( 1 bag, usually ) Combine flour, sugar, baking powder and salt in a medium bowl. Add evap milk, water, and butter (or oil). Stir until thoroughly blended. Mix in cranberries. Spoon into buttered 8 1/2 x 4 1/2 x 3 inch loaf pan. Bake in 350 degree oven about 1 hr or until toothpick inserted in center of loaf comes out clean. Cool 10 min on wire rack before removing from pan. Buttery Sweet Sauce 1/2 cup butter 1 cup sugar 2/3 cup undiluted evap milk (*NOT* sweetened condensed) Melt butter in small saucepan. Add sugar and undiluted evap milk. Heat to rolling boil; boil 1 minute, stirring constantly. Remove from heat; stir in 1 tsp vanilla. Serve warm over warm cranberry loaf. Yields: 1 3/4 cups. ***** Enjoy . . .
