Aihuxm.114 net.cooks utcsrgv!utzoo!decvax!duke!chico!harpo!npois!houxi!ihnss!ihuxm!larry Sun Feb 7 11:21:26 1982 pound cake This is a SUPER rich pound cake that looks and tastes like a yellow cake. 9 egg whites 9 egg yolks 3 cups sifted* all-purpose flour 2 cups butter or regular margarine, * sift before measuring softened 1 teaspoon baking powder 2 teaspoons vanilla extract 1/2 teaspoon salt Confectioner's sugar or Special 2 cups sugar Chocolate Frosting 1. In large bowl of electric mixer, let egg whites warm to room temperature - about 1 hour. 2. Preheat oven to 350F. Grease and lightly flour 10-inch tube pan. Sift flour with baking powder and salt; set aside. 3. With electric mixer at high spped, beat egg whites until foamy. Gradually beat in 1 cup sugar, 1/4 cup at a time, beating after each addition. Continue beating until soft peaks form when beater is slowly raised. Turn into medium bowl. 4. In same bowl, at high speed, beat yolks with remaining 1 cup sugar, butter, and vanilla, for 5 minutes. At low speed, beat in flour mixture just until smooth. 5. At low speed, gradually beat in egg white mixture just until blended, scraping bowl and guiding batter into beater with rubber scraper. 6. Turn into prepared pan. Bake 65 minutes, or until cake tester inserted in center comes out clean. 7. Let cool in pan on wire rack 15 minutes. Loosen around edge of pan with spatula. Turn cake out of pan. Cool completely on wire rack. 8. Turn right side up on cake plate. Sift confectioners' sugar lightly on top or spread Special Chocolate Frosting. Slice thinly with sharp, thin- bladed knife. Makes 30 slices.
