However... I suspect that few of the people on this list are in immediate danger of dying from malnutrition. Indeed, because we are relatively well-fed in terms of the necessities of life we can explore the sensory delights beyond those of maintenance cooking. Food, like sex, has evolved into an activity which does more than gratify essential bodily needs. While all that we eat may not be good for us, I suspect that our bodies will tolerate more than a little processed flour and more than a few saturated fats. It is certainly likely that more than one standard for good food will emerge in net.cooks Hopefully those standards will be sensory and not political. (I have visions of one of the folks from poli-sci letting loose on the politics of beef stroganoff.)
